- Combine the gin, lemon juice, and rosemary simple syrup in a cocktail shaker with ice.
- Shake vigorously for 10 to 15 seconds until well chilled.
- Strain into a glass filled with fresh ice.
- Top with club soda (as desired).
- Gently twist a rosemary sprig over the glass to release the aromatics, then use as a garnish.
Rosemary Simple Syrup Note: Combine equal parts water and sugar in a saucepan with 2 to 3 rosemary sprigs. Simmer for 3 to 5 minutes, remove from heat, and let it steep for 15 minutes (or overnight) before removing the herbs and letting it cool. It can be kept in an air tight container in the fridge for up to three weeks.
