How does this relate to Champagne Popsicles, you ask? Well, they used to sell them, and they were delicious. I am not sure what happened, but they don’t make them anymore. I suspect there was an incident involving incredible stiletto heels, taffeta, and a fascinator.
It got me thinking: How could I recreate these on the boat? After much “science” and experimentation, I landed on this bubbly delight. You can use fruit/grape juice or flavoured simple syrup, but I went with the low-calorie version—under 50 calories each!

Ingredients (Makes 6-8 popsicles)
- 1 ½ cups Champagne or Prosecco (chilled) – (~20 cal per serving)

- ¼ cup freshly squeezed lemon or lime juice (optional but it adds brightness) – (~4 cal)
- ½ cup fresh fruit slices (strawberries, raspberries, or peaches) – (~10-15 cal)
- Stevia or monk fruit sweetener (optional) – (0 cal)
Instructions
- Prep the fruit: Thinly slice berries, peaches, or your favorite low-cal fruit and place a few pieces into each popsicle mold.
- Mix the liquid: In a small pitcher, combine Champagne, sparkling water, lemon/lime juice, and sweetener if using. Stir gently to preserve the bubbles.
- Pour & freeze: Fill the popsicle molds, leaving a little space for expansion.
- Insert sticks: Depending on your mold, insert popsicle sticks, cover or seal bags and freeze for 6-8 hours or overnight.
- Unmold & enjoy: Run the molds under warm water for a few seconds for easy release. Or simply hand out the frozen popsicle bags.
